Aspen: Chocolate Chip Cookie Contest & Edward Sharpe at Belly Up

You have got to be kidding me. In the midst of one of the greatest gourmet food and wine festivals in the country, there’s a chocolate chip cookie contest?! There’s no way I can go to this … I will eat all of the cookies and be unable to gorge myself further with fabulous food and delicious wine.

However, if you have more self-control than me, you should definitely stop by Aspen Sports on Friday, June 18th, from 3-4pm. The public is the judge, which means you HAVE to sample all of the entries. See? No way I can go.  Two divisions for Adults and Children (14 & Under). Prizes for the best chocolate chip cookies. After I surreptitiously avoid the chocolate, I will be heading to Belly Up for Edward Sharpe & The Magnetic Zeroes. My way-cooler-than-me bestie from college, Jake, introduced me to Edward Sharpe when he was in Austin, and it remains the one and only time I have been in Waterloo Records checking out new music with a pair of their cool noise-canceling headphone that make you feel like a radio DJ (we were only there as we waited for a table at 24 Diner). Anyway, can’t wait to see him live.

My silly baking: paleo pumpkin chocolate chip cookies

I really enjoy baking. I also really enjoy eating Paleo (no processed food, no grains, no dairy, no sugar), and the two are not very compatible. So I constantly quest to bake as Paleo-ish as possible. I have more failures (well, what’s a failure, really? I’ll eat it, but I wouldn’t feed it to friends) than successes, but recently I had a big warm, wintery success in Pumpkin Chocolate Chip cookies. Of course, I bake in a manner utterly incomprehensible to REAL cooks, because I sometimes guesstimate or don’t level out my flours or whatever. And it still works out okay most of the time. But I digress.

I modified a recipe from one of my absolute favorite blogs in the whole wide web, Cookie Madness. How on earth does Anna stay so slim baking so often? I have no idea. Anyway, behold the original and my mods:

Pumpkin Chocolate Chip Cookies (+ Hazelnut!)

1 cup canned pumpkin
1 large egg
1 scant cup granulated sugar (I used turbinado … debatable whether it’s actually better for you or not, but might as well give it a shot)
6 tablespoons vegetable oil Coconut oil
1 teaspoon vanillaI just didn’t have any, so I didn’t use it
1 teaspoon cinnamon
I also added 1/2 teaspoon nutmeg, which gave it some of its winter flavor
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons double-acting baking powder
2 cups all purpose flour or white whole wheat flour (9 oz) I used 1 cup hazelnut flour, approx. 2/3 cup coconut flour, 1/3 garbanzo/chickpea flour (not paleo bc it’s a legume)
1 cup semi-sweet chocolate chips (vegan, malt-sweetened choc chips, Central Market bulk section are my fave)

Preheat oven to 375 degrees F.

Beat pumpkin, egg, sugar, oil, vanilla, cinnamon, salt, baking soda and baking powder together in a mixing bowl. Make sure all the leavenings are dissolved (no lumps). Add the flour and stir just until it is mixed in, then stir in the chocolate chips.

Using a very generously rounded tablespoon measure, drop onto parchment lined cookie sheets spacing about 2 inches apart (cookies shouldn’t spread much). Bake at 375º for 13 to 15 minutes.

Remove from tray and let cool.

Makes about 18 cookies

Note: I also made these without the chocolate chips, and they were equally as good. Closer to pumpkin loaf then, but still very, very tasty.

Things I have learned about trying to substitute Paleo ingredients:

  • Coconut flour is great, but really, really dry. You can only use it for about 1/2 of the flour in a recipe.
  • Coconut flour and oil both lend recipes a very coconut-y taste. Not in a bad way. Not even if you don’t like coconut (I don’t).
  • Garbanzo flour is the easiest 1:1 sub for white flour. But it’s not really paleo. But it is much better for you than white or wheat flour.
  • Almond meal would definitely work in this recipe in place of or alongside the hazelnut meal. But almond meal has a different flavor than hazelnut, so the whole flavor would definitely change.
  • Sugar is the hardest thing to substitute. The best is dates pureed with applesauce. I haven’t personally tried that yet, but like using barley malt or brown rice syrup (neither paleo), you then have to also deal with liquidity issues. If I could find palm sugar again, I’d use it. But in the end, I usually splurge here.
  • Many people look for Paleo Recipes. I don’t–I look for good recipes that I think I can substitute in. Play around with it … the worst that happens is you get something inedible! The best? You create a whole new recipe!

Cookie Dreams

I ate the cookies too fast to even photograph them.

Let me explain: I’m out at a food blogger happy hour at parkside (delish) and I meet this super-stylish girl named Alexandra. Turns out she owns the cookie company I’ve heard great things about but never really understood: Alexandra’s Cookie Dreams. The confusing part is that you can’t buy ACD anywhere in Austin, but they’re made in Austin. Don’t fret, though, because I didn’t realize what a baby this company is–barely a year old! So while the online portion of the biz is booming–and I mean a mention on Rachael Ray booming, not just any boom–the distribution in local stores is just getting started. When Coffee Bean & Tea Leaf opens in June, her cookies will be available there. Back to the point: sweetheart that she is, Alexandra has a box of a dozen cookies (2 cookies of 6 varieties) delivered to my house the very next day.

The fella and I proceed to sample almost every flavor. If I only had 1/2 of each, that isn’t too gluttonous, is it? My favorite out of those was the “simple” Double Stuffed Chocolate Nightmare, “A chocolate lovers dream! Chunks of Callebaut milk chocolate and Ghirardelli© semi-sweet chocolate are layered and stuffed into a vanilla cookie that is chewy on the inside with a crispy outside.” The fella enjoyed the Peanut Butter Bliss the most.

However, I didn’t discover the true gem until the morning, when I decided that it was totally appropriate to eat a cookie for breakfast, since it was named The All-Nighter. Surely something designed to keep you awake can also legitimately substitute for a cup of coffee in the morning? They say: “The chocolate, espresso, cayenne punch is created by first melting Ghirardelli© semi-sweet and un-sweetened chocolate; Illy© dark roasted espresso powder and salty hand-cut walnuts are then added to create a delicate, chewy mocha cookie that is finished with a welcomed jolt of red cayenne pepper.” I say: hot damn if I didn’t eat both of these cookies that morning.

So I ate all the cookies before I could photograph them to share with you guys. My bad. But take that as the greatest endorsement I could give? The woman behind the cookies is as awesome as the treats themselves, and she uses all natural, no preservatives, local ingredients and companies as much as possible, just all good stuff. Until they’re in stores, hit the website to order cookies online … you don’t even have to tell anyone, so you don’t have to ‘fess up when you eat them all (for breakfast) and don’t share with your friends.

A few thoughts on Valentine’s Day

I love Valentine’s Day. I’m the girl who makes something for all her friends to show them how much she loves them and because she doesn’t want them to feel left out on such a lovey holiday (also, usually single). But I like that more than the stereotypical romantical Valentine’s Day–could have to do with the singleness. But I’m actually “attached” for once, so I can’t help but be excited for a dinner date. Below I’ve posted a guide for things to do if you’re single or attached–just embrace the love either way! (Not gonna lie to ya, fellas, this one is geared toward the ladies except steps 2 & 4)

Cookie Lounge – Hello Candied Serrano Pepper

Candied serrano peppers.

Sure, the dough is good, the customizing thing is good, the choices are good … yeah, Cookie Lounge is good. But the candied serrano peppers make the place great. They make your cookie fantastic.

I had the gluten-free dough, which is made with amaranth–an ancient grain that’s so super good for you. It’s high in protein and digested slowly by your body, as opposed to white flour. I put in mine the candied serrano peppers, dark chocolate pieces, and toffee. It was very, very good, and not too sweet. The spice lent the heavier dough a gingerbread-like taste, but I don’t know how much resemblance it has sans serrano.

Astonishingly enough, my complaint with the other cookies was too sweet! They’re good, for sure, but even of the peanut butter I could only take a bite; the second bite overwhelmed me. My friend ordered a cookie with brown sugar butter dough with snickers, dark chocolate, and something else, with a white chocolate drizzle, and while a bite of it was tasty, it was definitely overwhleming.

Last time, I wrote about the milks being locally sourced. Still hoping that’s true, because I drank one, and their milk mixes or milkshakes or whatever are delish–chocolate-covered cherry is what I enjoyed.

The owner/chef is Mark Chapman, former chef at the Driskill. He is an amazingly passionate man, will bend your ear all day about cookies and gluten-free dough and how excited he is to see his dream come true. You know anything coming out of the kitchen is high quality and made with a lot of care, as he speaks excitedly of French butter or some kind of fancy vanilla.

So, my verdict is this: definitely go to cookie lounge. It’s an experience, and you can get exactly what you want. But DO exercise a little restraint, as throwing all the things you love into one cookie won’t necessarily make the best cookie you’ve ever had.

After all, I have to go back at least to try the vegan gluten-free dough–I didn’t get a chance to, so I need to go back!

From Ultra Lounge to Cookie Lounge

You know Austin is big when we have an Ultra Lounge (Pangaea) AND a Cookie Lounge. One of the top 10 pastry chefs in the nation, Mark Chapman, former executive pastry chef at the Driskill, schemed up Cookie Lounge as a customizable cookie shop and delivery service.

Here’s the main draw: customers choose from six cookie dough options and more than 30 mix-ins–from M&Ms and marshmallows to more indulgent ingredients like French chocolate, goji berries, sundried cherries, and toasted pistachios sprinkled with sea salt. You can even design gluten-free oatmeal cookies!

Though the place doesn’t open ’til mid-October (sorry to get your hopes up), it will also be a kick-back destination with cozy work spaces, free wi-fi, french-press coffee, and hand-spun milkshakes. Plus, the Cookie Lounge will offer locally farmed milks in a variety of fat contents, from double whole to skim milk, as well as other options like soy and almond milk–I’m super-excited about that! You can barely find locally-farmed milks at grocery stores, much less restaurants! In West Campus, it’s sure to become a UT fave.

Sugar Mama’s Bakeshop

Mmmmm more cupcakes. I know I’ve blogged about quite a few cupcake places, and my reviews are usually pretty good. I mean, it’s pretty hard to screw up a cupcake. (Well, that’s not really true, because Hey! Cupcake figured out how pretty easily) But after all the buzz Sugar Mama’s Bakeshop has been getting, in the name of journalism I had to investigate …

The cake melted in my mouth. And was gooey. And fudgey. It astonished me. I am not a cake girl. I will happily eat the icing off the top of cakes or cupcakes and leave the cake to someone else. I am an icing girl. But this cake … this cake was incredible. How could it be melty and gooey and fudgey all at once? I marveled at this as I licked the last bits off the cupcake paper. It was that absurd. I was licking the paper. I had taken the thing to go, and almost turned my car right back around to buy another.

I ordered the peanut butter cup, a chocolate cake with peanut butter icing. The icing, in contrast to the fantastic cake, pretty much sucked. It had very little flavor other than sugary-sweet, and it was a weird texture–way too airy, way too light to be buttercream, as it advertised itself. The shop also offers cream cheese icings, but there’s only so much cupcake a girl’s waistline can take. At one sitting.

That’s another thing. These babies don’t come cheap. The cupcake is really small, like the kind you bake yourself, and at $2.50, seem a bit overpriced. Personally, I’m happy to pay that much and have less to eat–I consider it a sort of portion control, because lord knows I can’t do that on my own. But savvy consumers will be hesitant to pay that much for the small cake. It’s worth it though, at least once.

I’d also recommend sitting in the South First shop, as it’s super cute with red-and-white decor, friendly servers, and a fun, adventurous menu. They offer six regulars, and a host of rotating options. Some of the more exciting cupcake offerings include a Black & Tan Guinness cake with Irish cream frosting (Wed & Fri), French Toast (Thurs & Sat), or the Elvis banana cupcake with peanut butter frosting and gold dust (Tues & Fri).

I can’t vouch for this personally, but I hear the molasses cookie is heavenly.

Short of that incredible cupcake from Sprinkles (remember to vote for an Austin location!), Sugar Mama’s is now my vote for best cupcake in Austin! Of course, I will never quit my search for the best … I’ll just be going to the gym/trail a little more often.
