Everyone Should Try Miracle Noodles

You guys might not know this, but I used to be a noodle fanatic. Growing up, I would eat whole wheat noodles for breakfast and dinner with parmesan cheese, nothing else. Needless to say, in my paleo or at the least gluten-free life, I’ve tried a lot of noodle substitutes. I love spaghetti squash noodles. I can tolerate kelp noodles but they’re sort of weird and crunchy. I tried those shiritake tofu noodles, but now I don’t eat soy. I really, really wanted those ezekial sprouted grain noodles to be delicious, but they’re just sort of gummy.

Enter Miracle Noodles.

I ordered a 10-pack and I have eaten a bag every single day since I got the package. Surely that pace will slow soon, but for now, I am LOVING experimenting with Miracle Noodles! I have tried them in everything from spaghetti (yum but get a little drowned out by heavy tomato sauce) to scampi (fabulous) to curry (excellent) to solo with garlic salt (yum!).

They much more closely approximately rice noodles than any other sort of noodles, so keep that in mind when you’re planning all the amazing new gluten-free noodle recipes you’re going to make.

Miracle noodles (ignore the green glop on the right and focus on the delicious combination of Miracle noodles, spinach, onions, and steak. No sauce, just spice, still delicious!)

Miracle Noodles are made of naturally water soluble fiber with no fat, sugar, or starch. Contain zero net carbohydrates and zero calories, no gluten–made of a healthy natural fiber called Glucomannan (click here for more on it from wikipedia).

Order online or supposedly find them at “Asian stores” … I ordered online at Miracle Noodles. 10 packs for $21.99 (+$10.89 shipping, so factor that in … they’re about $3/bag.)

Taking Time for Myself: a Non-Negotiable Part of Life

People always talk about taking time for yourself. It’s super important for personal peace, personal growth, and personal happiness. And stress relief.

I’ve never thought of myself as a stressed person. In college everyone would be cramming for exams in the library, and I’d be there too, only without the sense of urgency they had. I can only do what I can do. In my career prior to EB, I slept easy and worked hard. But the other day I had a revelation: I no longer sleep like a rock.

I used to lay down, immediately fall asleep on my back, and wake up in exactly the same position eight or however many hours later. It was awesome.

Since I started working at EB, however, I’ve taken to tossing and turning, rolling from side to side, and never waking up how I fell asleep, which was inevitably 5-10 minutes after I’d laid down the night before. But life IS stressful, so I’m not exactly complaining. I just use this to illustrate my next point: I used to think I took time for myself, now I schedule it.

I do yoga! I go to the gym! I walk the dog!

These are things that I do for myself, but they’re also a regular part of my daily routine. So I’ve worked my time-for-myself into my schedule, and made it non-negotiable. In our hyper-busy, over-stressed environment these days, I think that’s the only way to do it. Time for yourself must be non-negotiable. It’s the only way to manage stress.

My time for myself varies from day to day, week to week. If I’ve been traveling a lot, my me time is often on the couch. If I’ve been home a lot, then maybe it’s an extra yoga class. But as long as I continue to recognize that I need me time, schedule it as a non-negotiable, and get to recharge, I’m happy.

Now, off to watch Gossip Girl. I may not watch it at the same time every week thanks to DVR, but everyone knows not to mess with my GG time. It’s me time.

Austin: New Elizabeth Street Cafe

They’ve successfully done barbecue and upscale seafood, so why not add Vietnamese? Lamberts and Perla’s co-cwners Larry McGuire and Thomas Moorman have launched a new restaurant group (McGuire Moorman Hospitality) and announced a new restaurant called Elizabeth Street Café, a casual eatery serving simple Vietnamese cuisine in an environment inspired by a cozy French neighborhood café.

Housed in the old Bouldin Creek Coffee House space, Elizabeth Street Café is scheduled to open this spring. McGuire Moorman Hospitality has designed Elizabeth Street Café to evoke the feel of French Colonial Hanoi, bringing it to life in a completely rebuilt space designed by Jamie Chioco that emphasizes landscaped outdoor seating areas and an intimate interior. Open from the early morning hours to midnight, the café will serve breakfast, lunch and dinner.

Elizabeth Street Café’s breakfast menu will include freshly baked croissants, pastries and breads, from Pastry ChefAlexandra Manley, as well as a selection of teas and gourmet coffees including Vietnamese drip coffee, a dark-roast brew combined with sweetened condensed milk.

The moderately priced lunch and dinner menus will feature classic Vietnamese meals highlighting locally sourced proteins: McAllen Ranch Beef, Niman Ranch Pork, and San Miguel Seafood from the Gulf of Mexico.  Daily specials will include Vietnamese curries, crepes, and rice wraps.  Elizabeth Street Café will serve beer, wine, and sakes to complement the light and fresh menu offerings.

Yum, I absolutely cannot wait to try it!! Since going happy-meat-only, I haven’t had much Vietnamese food, but I love it. I’m so excited!

Austin: swapatx Presents Clothing Swap!

Clothing swaps are not new. People who are really good at organizing them are. Check this from swapatx’s FAQ:

There are free swaps around town. Why are you charging $5?

A couple reasons. First of all, charging a nominal fee helps us to be able to spend a lot of our free time working the event- it also helps us be able to make the events fun: free dance parties exist, but there’s a reason you’re willing to pay to go to a really good one. We gotta pay for coffee. But more importantly, when we’ve done free events, we’ve gotten a lot of creepers looking for free stuff and piles of really crappy clothing. The $5 keeps the creepers out & you in. We are not above being exclusive.

Right on. So hit up Beauty Bar (617 E 7th st.) on Saturday, February 19th from 4-9pm for some sweet free clothes and cool people. $5 ($10 without clothes)
