Hey Bryan,

Yes, it can get confusing! Grass-fed and free-range are both good terms for cows. Kobe, however, is a class of its own and not at all free-range: the less they "work out" by ranging, the "better" the meat is because its fattier. So the best is a cow suspended in midair, right? So if you're interested in cow health, Kobe/Wagyu is NOT the way to go.

I called ALC awhile back and asked about their sourcing, and while I don't remember where they get their beef from, it was a local, free-range farm I recognized. Or maybe Niman Ranch, which is free-range from California. Recently, I asked about their pork and they looked at me like I was crazy to suggest it wasn't local and free-range. If you're curious, they're happy to talk to you about it when you call.

Just for clarity's sake... what's the full story on the beef that AC&L serves? I took a peek at their website, but it didn't indicate anything along the lines of grass fed or free range cows. And I suppose I had only thought of free range as applying to chickens, and perhaps Kobe beef as the exception in the cow world.

Thanks!
